Scallops Sauteed with White Wine

I really do love the taste of scallops, but i hate hate hate it when there is sand grit in them. I have soaked it out, or tried to. Nevertheless, these were very tasty.

- Ingredientsscallops
- 1/2 cup all purpose flour
- 1/2 cup panko breadcrumbs
- salt and pepper
- 1/2 cup white wine
- 1 tablespoon butter
- 1/2 cup buttermilk
- oil for frying
1tablespoon fresh chopped chives (optional) How to Do It:Swill scallops in buttermilk, and drain. Place flour, panko and spices in a ziplock bag, shake to mix. Place scallops in bag, a few at a time and shake to coat completelyHeat pan to medium high, saute scallops until a good brown develops. Once cooked, remove scallops topaper towels.Add wine to the pan and scrape up bits. Add butter, and simmer until reduced by half, about 3 minutes. Add scallops back to pan and spoon sauce over, sprinkle with chives
Serve immediately.
