Baked Sweet Potatoes

Ingredients

  • 3 c cooked sweet potatoes, mashed
  • 1 tsp vanilla extract
  • 1 c sugar
  • 1/3 c flour
  • 1 c (2 sticks) butter/margarine, divided
  • 1 tsp cinnamon
  • 1 c brown sugar
  • 1 c pecans, chopped

Directions

  1. Preheat oven to 350 degrees.  Mix together sweet potatoes, 1/2 c (1 stick) butter, vanilla, cinnamon and sugar.  Place in a 13×8″ baking dish.  Bake for 20 minutes.  Mix together brown sugar, flour and pecans in a small bowl.
  2. Sprinkle sugar mixture over potatoes. Melt remaining 1/2 c (1 stick) butter and drizzel over mixture.  Bake for 10 minutes.  Makes 8 servings.
