- 3 c cooked sweet potatoes, mashed
- 1 tsp vanilla extract
- 1 c sugar
- 1/3 c flour
- 1 c (2 sticks) butter/margarine, divided
- 1 tsp cinnamon
- 1 c brown sugar
- 1 c pecans, chopped
- Preheat oven to 350 degrees. Mix together sweet potatoes, 1/2 c (1 stick) butter, vanilla, cinnamon and sugar. Place in a 13×8″ baking dish. Bake for 20 minutes. Mix together brown sugar, flour and pecans in a small bowl.
- Sprinkle sugar mixture over potatoes. Melt remaining 1/2 c (1 stick) butter and drizzel over mixture. Bake for 10 minutes. Makes 8 servings.
