Baked Apple Pancake

Ingredients

  • 1/4 cup butter
  • 4 to 5 apples, peeled,cored and thinly sliced.
  • 1/2 cup sugar
  • 1/2 cinnamon
  • 6 eggs
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 tsp. salt

Directions

  1. In an 8 iron skillet, melt butter. Add apples,sugar and cinnamon, saute until apples begin to soften. In a mixing bowl, blend together eggs,  flour,milk, and salt: pour over apples directly in iron skillet.
  2. Bake, in iron skillet, at 375 degrees for 20 to 30 minutes or until puffed and pancakes tests done in the center.
  3. Serve with maple syrup if desired. Makes 6 servings.
